Mango & Chicken Salad Sandwich

This low calorie, high flavor chicken salad, is sure to make your day bright and just a smidgen more tropical. The mango puree balances the spice with sweet, without having to add any sugar or sweetener. We opt for a yogurt base to keep it even “skinnier”.



Mango & Chicken Salad Sandwich

A healthy chicken salad
Makes 3 cups of chicken salad

¼ cup fresh mango pure, thick version
½ cup yogurt
2 tablespoons Dijon mustard
2 teaspoons chopped-fine fresh jalapeño
1 tablespoon lemon juice
1 teaspoon lemon zest
2 tablespoons chopped fresh parsley
¼ cup chopped fine red onion
2 teaspoons kosher salt
1 teaspoon cracked black pepper
hot sauce (optional)
2 cups roasted or rotisserie chicken, cubed or shredded
lettuce, spinach or spouts


Whisk together all ingredients except the chicken, lettuce/spinach/spouts and bread in a small-mixing bowl until smooth. Taste the dressing adding salt or pepper or hot sauce until you get your desired taste. Place the chicken in a medium mixing bowl and pour the dressing over it. Gently mix together the dressing and chicken until thoroughly mixed. Refrigerate the salad for at least a half hour before serving, ideally 1 hour.

Assemble you sandwich as desired with the bread, lettuce, spinach or sprouts!
